Steeping wild hand-harvested sloe berries directly in classic copper-pot-distilled Plymouth Gin, this historic English liqueur preserves the authentic tartness and natural stone tannins of Devonshire blackthorn hedgerows. Unlike modern commercial fruit cordials that rely on neutral grain spirits spiked with artificial berry extracts and excessive corn syrup, Plymouth allows the whole fruit and its crushed pits to slowly macerate in their softer, seven-botanical base gin. This traditional contact extracts genuine natural fruit acidity, rich anthocyanin color, and a distinctive nutty, marzipan-like character derived directly from the sloe stones, balanced by a measured touch of pure sugar.
Palate weight is medium-rich yet remarkably buoyant, opening with ripe damson plum and dark cherry before the astringent, dry skins of the sloe berry grip the sides of the mouth. In-house testing at USQ showed that the spirit's vibrant acidity cleanly cuts through sugar, preventing mixed drinks from turning cloying. For a benchmark Sloe Gin Fizz, our team recommends shaking 1.5 oz Plymouth Sloe Gin, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup vigorously with ice, straining into a chilled highball glass, and topping with 2 oz club soda. In a classic pre-Prohibition Charlie Chaplin, it shines when shaken in equal parts: 1 oz Plymouth Sloe Gin, 1 oz apricot liqueur, and 1 oz fresh lime juice, double-strained into a chilled coupe.
