This small-batch release celebrates traditional techniques and local resources. The foundation relies entirely on premium Fijian sugarcane grown in nutrient-dense volcanic soil and nourished by some of the purest water on earth. Local farmers harvest the sugarcane entirely by hand before converting it to rich molasses at the local mill in Lautoka town. Fermented for four to five days, the liquid undergoes a precise combination of pot and column still distillation at the Rum Co of Fiji. This meticulous process ensures a beautifully structured spirit with unique estate character.
The true signature of this bottle lies in the dual-climate double aging process. The spirit first matures under the tropical sun of Fiji in charred American oak bourbon casks. Next, the barrels travel across the globe by sea. This voyage exposes the wood to constant oceanic movement, accelerating wood interaction through dynamic aging. Finally, the liquid arrives in France for a continental maturation phase inside fine French oak Ferrand cognac casks.
The spirit pours a radiant honeyed gold. The nose opens with a warm, welcoming bouquet of stewed raisins, ripe exotic fruits, and fresh sugarcane.
