Grown on mid-slope calcareous limestone parcels across the eastern rim of the Loire Valley, this 2025 Sancerre captures the tension and purity produced by chalk-dominant soils. Domaine Moulin Jamet employs gentle pneumatic pressing followed by meticulous cold settling, fermenting the juice slowly in temperature-controlled stainless steel vats to retain volatile thiol compounds. Extended maturation on very fine lees provides structural depth and roundness without wood interference, contrasting with New World expressions that often emphasize aggressive pyrazines or tropical sweetness.
Palate weight opens with an ample, textured attack before high-tension malic and tartaric acids drive a mineral, bone-dry core. Layers of tart green gooseberry, kaffir lime peel, and crunchy Asian pear give way to wet stone minerality and subtle elderflower notes. In-house testing at USQ showed that the lees contact gives the wine enough mid-palate body to slice through fatty emulsions and delicate proteins without stripping flavor. Our team recommends serving this lightly chilled alongside traditional Loire pairings such as fresh Crottin de Chavignol, steamed Bouchot mussels in white wine broth, or poached cod draped in a lemon-caper reduction.
