Ming River Sichuan Baijiu captures the essence of a tradition that spans centuries. It comes from Luzhou Laojiao, the oldest continuously operating distillery in China, founded in 1573. This spirit represents the classic Sichuan style of baijiu, known for its bold and savory character. The production process is strictly traditional. It begins with locally harvested red sorghum grain and water drawn from protected wells. The key to the flavor is "qu," a natural culture of airborne yeasts and microorganisms. The grain ferments in ancient earthen pits for two months. This solid-state fermentation creates a rich complexity you cannot find in other spirits.
After fermentation, the mash is distilled in small batches using a traditional Chinese pot still. The spirit then ages for up to two years to settle and mature. The result is a robust liquid with a distinct body and terroir. While it honors the history of the region, Ming River is also crafted to shine in modern cocktails.
