Distilled from the sour, acidic Marasca cherry according to Girolamo Luxardo's original 1821 recipe, this crystal-clear Italian liqueur derives its character from long botanical maceration rather than standard fruit flavoring syrups. Whole cherries-alongside crushed pits, branches, and leaves-macerate in neutral spirit inside larch-wood vats for up to three years before undergoing traditional copper pot distillation. Maturation in neutral Finnish ash-wood vats allows the volatile spirit cuts to integrate without leeching amber wood tannins, maintaining a clear appearance, dry cherry stone grip, and an assertive 32% ABV backbone.
Palate weight is viscous yet cut by a distinctly sharp, dry, spiritous edge that counters the residual sugar. Bitter almond, dark cacao nibs, and orange marmalade emerge across the mid-palate, finishing with an earthy cherry-pit astringency that cleanses the tongue. In-house testing at USQ showed that this dry-stone intensity acts as a powerful structural modifier rather than a cloying sweetener in classic bar builds. For a textbook Last Word, our team recommends shaking equal parts: 0.75 oz dry gin, 0.75 oz Green Chartreuse, 0.75 oz Luxardo Maraschino, and 0.75 oz fresh lime juice over ice, double-straining into a chilled coupe. In an Aviation, a mere 0.5 oz anchors 2 oz gin, 0.75 oz lemon juice, and 0.25 oz crème de violette with essential tartness.
