As Adam Polonski beautifully detailed in his December 2019 Whisky Advocate article, "Heirloom Rye Seeds American Inspiration," this project began in 2010 with just ten tiny seeds from the National Seed Repository in Idaho. Cultivated first under lab lights at Cornell University and eventually moving to a four-square-foot plot on Rick Pedersen's Finger Lakes farm, this forgotten Horton rye was painstakingly revived over a decade. Polonski notes that bringing this grain back to life "demanded the joint effort and patience of not just a distillery, but a federal seed repository, a university, and a heritage farmer." Now, that immense patience has paid off, and we are thrilled to share the fruits of this historic labor with you.

Jaywalk Heirloom Cask Strength Rye Whiskey represents a triumph of agricultural dedication and craft distillation. Produced by the New York Distilling Company, this limited autumn release features a grain that exists in no other whiskey on earth. The mash bill consists of 75 percent Horton Rye, 13 percent New York corn, and 12 percent malted barley. Resurrected from a mere ten seeds in 2010, this historic rye variety delivers an entirely unique flavor profile compared to modern commercial grains.

Aged for seven full years in charred oak barrels and entered at 115 proof, this cask strength spirit offers remarkable depth. In the glass, it glows with a deep copper hue. The aroma is rich and inviting, distinctively moving away from the standard spice of everyday rye. Instead, the nose reveals deep layers of caramelized sugar, dark floral notes, and ripe orchard fruit.
