Harvested from wild-grown Agave potatorum at 12 to 15 years of maturity on the steep slopes of San Baltazar Guelavila, Electrico Tobalá Joven showcases the structural depth of unaged artisanal mezcal. Maestro Mezcalero Manuel Antonio Cirino roasts the harvested piñas over dead-foraged oak in underground stone pits before double-distilling the fermented mash in copper alembic stills. Unlike industrially produced mezcals that rely on automated stainless-steel column stills or mixed-agave blending, this single-varietal expression relies strictly on airborne wild yeast and mineral-rich subterranean well water. The resulting 42% ABV spirit highlights the natural sugar density of fully matured mountain agave without post-distillation additives or wood aging.

The opening bouquet pairs a light, clean wood smoke with fresh botanical greenery, ripe pear, and raw honey. On the palate, a gentle initial heat builds across the tongue, expanding into crushed stone mineral drive, herbal brightness, and a long, grassy finish. In-house testing at USQ underscores how gracefully this Tobalá functions when served neat in a traditional glass copita, though its herbal depth also stands up remarkably well in low-dilution cocktails. For a balanced, agave-forward serve, our team recommends a modified Oaxaca Old Fashioned: 1.5 oz Tobalá Joven, 0.5 oz Reposado Tequila, 1 barspoon raw agave nectar, and 2 dashes of aromatic bitters, stirred with cold ice and strained over a single large ice cube with an expressed orange peel.
