Sourced from Chinese rhubarb root (Rhabarbarum palmatum) alongside native Alpine botanicals, Cappelletti's Amaro Sfumato Rabarbaro represents a century-old northern Italian tradition of wood-smoked amari. Produced south of Trento in Aldeno, this expression takes its name from sfumato-the artistic technique of blending light and shade-mirroring its balance between charred, savory wood smoke and deep, bitter sweetness. Unlike commercial amari that rely on heavy caramel coloring or synthetic smoke extracts, Sfumato derives its distinctively smoky, resinous backbone directly from the slow drying and maceration of raw rhubarb roots, peels, and mountain herbs.

A dark, brooding nose of campfire wood, chicory root, and wild blueberry leads into a medium-to-heavy physical weight on the palate. Initial notes of dark molasses, bitter cinchona, and roasted espresso bean are quickly enveloped by a dry, woodsy smoke that extends long into the finish with hints of bright alpine berries and pink grapefruit zest. In-house evaluations at USQ highlight its ability to replace sweet vermouth or aromatic bitters in spirit-forward drinks-our team recommends stirring a Black Manhattan with 2 oz rye whiskey, 0.75 oz Amaro Sfumato Rabarbaro, and 0.25 oz Averna over ice, strained into a chilled coupe with an orange twist, or serving 1.5 oz neat with a fresh lemon peel.
