Fermented for an intensive 25 days in pine vats-shifting to an anaerobic phase after day eight-this high-ester parcel achieves a staggering 1,039.95 mg/100 L A.A. of volatile compounds. Distiller Rommel Krassel handcrafts this unaged aguardiente de caña from 100% organic Java sugarcane farmed on steep Sierra Mazateca inclines reaching 4,000 feet above sea level. Unlike industrial white rums produced on high-rectification multi-column setups and cut with neutral water, this third edition was distilled exclusively on direct-fired copper pot stills and bottled uncut at a raw still strength of 64.8% ABV, yielding just 293 bottles without chill filtration or additives.

Briny capers, saline ocean air, husked green tomatillo, and cured green olives dominate the aromatics with unmistakable savory funk. The palate arrives with intense viscous weight, cutting through the proof with raw, grassy cane juice, cooling eucalyptus, scorched grilled pineapple, and tart green table grape. In-house evaluations at USQ revealed that this immense ester count easily anchors complex, citrus-heavy cocktails without getting washed out. Our team recommends a high-proof Daiquiri variation: shake 1.5 oz Altos Esteres with 0.5 oz unaged Rhum Agricole Blanc (50%), 0.75 oz fresh lime juice, and 0.5 oz rich (2:1) cane syrup vigorously with pebble ice, double straining into a chilled Nick & Nora glass.
