About Dansk Mjod Klaposter Mead
Fortifying fermented honey with caraway-infused aquavit rather than neutral spirit revives a late medieval Southern Jutland practice, driving the alcohol up to a robust 21.8% ABV while transforming the mead's fundamental structural balance. Unlike dessert-style honey wines that rely exclusively on residual sweetness to create mouthfeel, Klapojster Mjod introduces the savory herbal bite and phenolic dryness of traditional Scandinavian schnapps. Whole hops boiled into the original must contribute subtle resins and background bitterness, forming a savory framework that cuts directly through the honey's natural unctuousness.

Palate weight registers as viscous and palate-coating on entry, but quickly pivots as savory caraway oils, dried citrus peel, and gentle rye-grain spirit heat tighten across the mid-palate. In-house testing at USQ showed that the savory caraway notes function like a natural digestif, stripping away heavy honey sugars before they can turn cloying. Our team recommends pouring 2 oz neat at 50°F to 54°F in a tulip-shaped spirits glass alongside pickled herring, smoked trout, or salt-cured meats. For an adventurous cocktail application, our buyers recommend substituting it for sweet vermouth in an elevated Nordic Martinez: stir 1.5 oz barrel-aged aquavit, 1 oz Klapojster Mjod, 1 barspoon maraschino liqueur, and 2 dashes orange bitters over ice, straining up with a lemon twist.
