About Dansk Mjod Gl. Dansk Mead
Blending fresh ginger and whole hops into a fermented honey base prior to high-proof spirit fortification anchors this bottling in Denmark's oldest metheglin traditions, producing a rich profile that closely tracks an oxidized Oloroso sherry. Unlike unfortified commercial meads that can present thin and cloying on the palate, Gl. Dansk relies on a full 19% ABV neutral spirit addition to arrest fermentation. This preserves residual honey viscosity while allowing the spicy gingerols and hop resins to introduce structural phenolic grip, balancing high natural sugars with clean, lingering warmth rather than artificial sweetness.

Aromatics lead with floral honeycomb, dried orchard fruit, and peppery root spice before expanding into a weighted, golden-amber mid-palate. In-house testing at USQ showed that the ginger's sharp bite cuts cleanly across the honey's density, leaving the finish semi-dry and savory rather than sticky. Our team recommends serving it chilled between 48°F and 52°F in a standard white wine glass alongside salty, crystalline aged cheeses or savory roasted fowl. It also performs reliably as a modified winter highball: build 2 oz Gl. Dansk Mjod over ice in a rocks glass, add 2 oz club soda, and garnish with an expressed orange peel to accentuate the earthy hop resins and zesty root oils.
