Joel Gott 815 Cabernet Sauvignon offers a masterclass in regional blending. Rather than relying on a single vineyard, this wine captures the best traits from six distinct California growing areas to create an elegant and balanced red wine.
The winemakers source one hundred percent Cabernet Sauvignon grapes from across the state. Napa Valley fruit brings complexity, while Sonoma County adds subtle spice. Mendocino provides deep color and rich fruit, and Lake County contributes firm tannins and minerality. Lodi fruit brings a soft texture, and Central Coast grapes ensure crisp acidity. Following the harvest, the team sorts, destems, and ferments the grapes in individual lots. The wine then ages for sixteen months in oak, utilizing thirty percent new American oak barrels. The winemaker tastes the barrels often to monitor tannin development before crafting the final blend.
