Fermenting 1,000 pounds of culled orchard "seconds" from Long Island's Briermere Farms, Matchbook Distilling builds this seasonal aperitivo around an authentic fruit-wine vinification rather than a neutral grain base. The North Fork distillery extracts whole peach juice through controlled boiling to avoid stone toxins and pectin haze, pitching Champagne yeast to ferment the liquid into an off-dry peach wine. Rather than back-sweetening commercial neutral alcohol with synthetic essences, the wine is fortified with in-house distillates of fresh-picked peach leaves and Briermere elderflower, followed by an infusion of bitter quassia wood, dried rose petals, and pink peppercorn to balance sweetness at an approachable 16% ABV.
Intense aromas of crushed almond, marzipan, and perfumed stone fruit lift off the pour, balanced by leafy green herbs and floral elderflower. The palate lands with plush, medium physical weight, leading with ripe yellow peach flesh and honeyed fruit before tightening against the drying, medicinal bitterness of quassia bark and a gentle pink peppercorn snap. In-house testing at USQ showed that its vinous core and restrained 16% ABV make it an exceptional low-proof substitute for sweet vermouth in stirred aperitifs. Our team recommends mixing a Bamboo Riff: stir 2 oz Daytrip Peach Amaro and 1 oz Blanc Vermouth over cracked ice for 25 seconds, strain into a chilled coupe, and express a fresh lemon twist over the surface.
