Bottled at a robust 47% ABV (94 proof), this Catskills spirit relies on direct fat-washing and botanical maceration to integrate olive lipids and herbal oils into the grain neutral spirit base. Unlike light, floral gins that lose definition when stirred into vermouth or amari, its physical texture and savory undertones maintain clear structural focus in spirit-forward builds.
Aromatics open with piney juniper, bruised tarragon, bright bergamot zest, and a distinct brine note from Castelvetrano olives. On the palate, a rich, round body carries initial citrus oils and cracked coriander before transitioning into herbaceous tarragon, subtle pepper, and a coating, savory finish driven by extra virgin olive oil.
