Distilled in small batches at Victoria Distillers in British Columbia, Empress 1908 Original Gin relies on a botanical bill of ten globally sourced ingredients cut with pure Canadian water. By using juniper more sparingly than traditional, pine-heavy London Dry expressions, the distillers allow warm spice and earthy root botanicals-specifically star anise and sarsaparilla root-to build a full-bodied, complex spirit structure. Unlike colored gin expressions or flavored line extensions, this flagship bottle remains clear and uninfused post-distillation, delivering a dry, spirit-forward profile engineered specifically for cocktail versatility.
Initial aromas present clean pine and sharp lemon peel backed by warm, licorice-like star anise. On the palate, a silky, coating texture provides physical weight, allowing the earthy sweetness of sarsaparilla and bitter orange oil to unfold across the mid-palate. In-house testing at USQ showed that the spirit's structural weight holds up remarkably well against dry vermouth and modern amari; our team recommends stirring a classic Martini using 2 oz Empress 1908 Original Gin, 0.75 oz dry vermouth, and 2 dashes of orange bitters, strained into a chilled coupe with a lemon twist.
