Distilled and blended by Antica Erboristeria Cappelletti in the Trentino region of northern Italy, Aperitivo Cappelletti-known locally as "Specialino"-remains one of the oldest traditional red bitters still in active production. Unlike major industrial aperitivi built on neutral grain spirits, heavy sugar syrup, and artificial dyes, Cappelletti utilizes a native Italian white wine base colored naturally with carmine to achieve its distinctive crimson hue. This vinous foundation imparts a natural structural acidity and a lighter, more tactile physical weight that yields a distinctly drier finish on the palate.
Aromas of vibrant blood orange, gentian root, dried cherry, and subtle mountain herbs lead the nose with zero cloying sweetness. The palate moves with agile, light-to-medium weight, where citrus peel brightness gives way to earthy bitterness, rhubarb, and a crisp, drying herbal persistence. In-house evaluations at USQ showcase its ability to elevate classic low-ABV serves-our team recommends building a classic Cappelletti Spritz by combining 2 oz Cappelletti, 3 oz Prosecco or dry sparkling wine, and 1 oz club soda over ice in a wine glass, garnished with an orange slice, or mixing 1.5 oz Cappelletti with 1.5 oz Dolin Vermouth de Chambéry Rouge for a bone-dry, wine-license-friendly Americano.
