Abasolo Mexican Whisky redefines the global spirits landscape by capturing the true essence of heirloom corn. Crafted from a single, ancient corn variety passed down by local mountain farmers for over two hundred generations, this unique spirit honors a deep agricultural heritage. While standard commercial whiskies often rely on modified grains bred strictly for high yield, Abasolo uses corn grown exclusively for its exceptional flavor at elevations over seven thousand feet.
To unlock the deepest flavors of this ancestral grain, the distillery employs a four thousand year old cooking technique. This traditional preparation method has never been used in whisky production before. It transforms the starches and draws out profoundly rich notes that standard processing simply cannot achieve. A small portion of the corn is malted in the dark before being milled, mashed, and slowly fermented with select yeast for over one hundred twenty hours.
The fermented liquid undergoes a slow, double distillation in traditional copper pots. The spirit then matures in a mix of new toasted and used oak casks. The aging warehouse features an open design with a light roof and no walls. This exposes the barrels to natural temperature fluctuations, creating a highly dynamic and unique aging environment.
In the glass, this exceptional whisky delivers a deeply nuanced profile unlike any other.
